Rice Krispies Easter Baskets

My kids were having a playdate, so I decided to have a special Easter treat ready for them when they got home from school.

I decided to throw together a couple of recipes and ideas to make these Rice Krispie Easter baskets.

Start by making the basic Rice Krispies square recipe:





40 large marshmallows
¼ Cup butter
6 Cups of Rice Krispies
Vanilla

Melt the marshmallows and butter in the microwave until melted (about 1 minute).
Add Rice Krispies and vanilla.
Stir until combined.

Then, I filled muffin tins with the mixture.

TIP: When working with Rice Krispies, I find it easiest to have my hands (or spoon) VERY WET. This way, the mixture won’t stick to you, and the water won’t ruin the recipe. Once you find it sticking, wet your hands again.

Make chocolate mixture.
This is not an exact science. I put approximately ¼ cup of chocolate chips in a microwave-safe dish along with approximately 1 Tbsp of coffee cream (milk would also work).
Microwave until melted (approximately 30 seconds).

Pop the Rice Krispies out of the muffin tins and put on a tray.
Take a spoon and drizzle a bit of the melted chocolate mixture on the top of each shape.
Press in an Easter candy. I used jelly beans and Cadbury Mini Eggs.

“These are the best Rice Krispies ever!”
“Can I have more?”

And, it all took less than half an hour! Easy!
