Creamy Chicken Casserole
Ma’s Chicken Casserole
I was extremely close to my grandmother, who we affectionately called Ma. Going to stay with her in PEI is the foundation of our favourite childhood memories. She was a wonderful cook and left behind a legacy that is hard to live up to! Ma had a few staples that she would always make when we would go to visit. One of our favourites was her Creamy Chicken Casserole.
I made it recently for supper, not having had it since she died seven years ago. I took a bite, and it brought tears to my eyes, in the way that tastes can trigger memories. What’s better is that my kids loved it, too! Or maybe it was because it is made with potato chips on the top!
At least they ate it without argument!
Here is the recipe:
1 ½ Cups diced cooked chicken or turkey
1 Cup sliced celery
2 Tbsp green pepper chopped
1 ½ Cups cooked rice (I use instant)
1 Tbsp lemon juice
1 Can Campbell’s Cream of chicken soup
¾ Cup mayonnaise
1 Can of mushrooms with liquid
Topping: Crushed potato chips
Sauté celery and green pepper. Add chicken. Mix ingredients in a large casserole dish. Top with crushed potato chips Bake at 350 for about 30 minutes, or until warmed through. What food triggers memories for you?
